There’s a simple reason why we don’t use the pith – the white layer of the citrus fruit immediately below the oil cells: It is of no value to our spirits because it does not contain any volatile flavouring substances. It consists mainly of pectin, a constituent of gelling agents. When ripe, mandarin pith is broken down into a network of fibres, referred to in Latin as “reticulata”, i.e. “netlike”. The pith breakdown in ripe mandarins is the reason they are so easy to peel. However, for us, they mean a lot of work because we go to the trouble of using a knife to scrape away the pith inside every single peel. But this has paid off because we’ve succeeded in producing a unique and particularly pure mandarin spirit. The aroma of the mandarin spirit is determined by the cyclic monoterpenes limonene and g-terpinene, and only very small quantities of N-methyl anthranilic acid methyl ester, which give it its characteristic bouquet. A spirit that can be drunk neat at any time, which immediately makes one dream of summery-southern climes.
